Mesmerise your palate with this succulent recipe imagined by our award-winning chef Giuseppe Pezzella, inspired by his trip to Japan in 2018. Called candy of the sea, the Hokkaido scallop is Japan’s most stunning prized possession.

The Capasanta Scottata truly defines the brilliant fusion between the East and West, using Hokkaido scallops from Japan and organic vegetables from Italy. The Hokkaido scallops are seared to a delicious crisp and brown crust. To complement the Hokkaido scallops’ distinctive flavours, textured carrot miso puree is added to the creation for an intensity out of the extraordinary.
